Caschette with pure Saffron
A confectionery with delicate and natural taste, typical of Mamoiada, a village of central Sardinia.
The light dough, made in the traditional way and decorated by skilled craftsemen, envelops the delicate filling prepared with Sardinian high quality Ingredients as almonds, honey, pure saffron and flavoured with fresh lemon zest.
Are prepared on the occasion of the commemorative celebration of Saint Anthony the Abbot but also during major events such as baptisms and weddings.
In the tradition to prepare this sophisticated and tasteful sweet is a way to show your own skills in being able to manage taste and aesthetics; the making of this sweet began as early as the cultivation of a few saffron bulbs by the families in the village and after a painstaking work of collecting are obteined from these bulbs the precious stigmas of an intense red color which after a period of drying are stored waiting for their use.
The Caschette are prepared in several steps starting with the preparation of the filling made of almonds, honey, sugar, fresh lemon zest and saffron which must cooking at low heat "pistiddare" (in Sardinian language)
Once the desired consistency is obteined and it has cooled we proceed to the preparation of the filling, making rolls called "hanneddos" that require more than a long preparation and also a day of rest.
The next day we prepare the dough with the wheat flour, a bit of margarine and water which is then rolled out and cut with special cutter wheels called "rodittas" which shape of the cut is different from each family and personalized by skilled Sardinian artisans.
Cooking is short to donate whiteness to the thin dough and to keep the filling perfectly soft and delicious.
